If you want access to places, Split on its own would be a better choice than Trogir - yu don't have to stay in the immediate town centre where it's busy and noisy. Plitvice are definitely too far for a day trip.

There are complaints about some places being overcrowded in July ( Dubrovnik, for instance, or Plitvice lakes), other complain because of long queues for the ferries to islands, crowds at the airports, hot weather, mosquitos - people complain for all possible reasons. All of the beaches in Croatia are rock or pebble, many also have sea urchins, which you do not want to step on, so water shoes or sea shoes are a definite must.
